Chocolate Paleo Snack Cake

This paleo snack cake recipe is gluten-free, grain free, dairy free, nut free, soy free, sugar-free…!

Makes 9-12 servings


10 soaked 1-2 hours organic unsweetened medjool dates, pitted

1 ripe banana

3 pasture raised organic eggs

1/2 cup= 50 grams coconut oil

2 teaspoons vanilla

1/2 cup= 50 grams coconut flour or unsweetened ground desiccated coconut

1/2 cup= 50 grams unsweetened cocoa powder

1 teaspoon baking soda


Place the medjool dates in a food processor and pulse until completely pureed.

Add banana and continue to pulse until pureed and combined with the dates.

Add the fruit purée to the bowl of a stand mixer, add the eggs, vanilla, coconut oil and mix on low-medium speed until well combined.

Combine the dry ingredients in a separate bowl.

Slowly add the dry ingredients into the wet ingredients and mix on low-speed, scraping down the sides, until you have a smooth batter.

Grease a 8×8 glass pan with coconut oil, pour in the batter and smooth it with the back of a spatula.

Bake at 350 degrees = 180 Celsius for 30-35 minutes or until a toothpick stuck in the middle comes out clean.

Alternative method for baking: Use a 9-inch round cake pan. Grease the pan and cut out parchment paper to fit the bottom. Cook per instructions above. Allow the cake to cool for about 10 minutes and turn it out onto a wire rack or cake plate to cool. Top with frosting, if desired, and cut into wedges. Can use whipped coconut cream with fresh raspberries. Or you can try the Avocado Chocolate Frosting!

Avocado Chocolate Frosting ( paleo and vegan)


1 perfectly ripe avocado

1/2 cup=50 grams good unsweetened cocoa powder

1 tablespoon=10 grams organic maple syrup or organic raw honey


Place all three ingredients in a food processor and mix together, stopping to scrape down the sides once or twice. The frosting is ready to spread immediately but you can refrigerate if you think it needs to firm up. Add a little water if it is too thick. (I didn’t add water). Makes enough frosting for one single layer cake.
