Fruitcake

Ingredients for an app. 25x10 cm elongated form:
6 organic eggs
1 riped organic banana
one tsp. baking powder
3 tbsp. Coconut oil
100 grams of half deoiled or normal almond flour
100 grams of soy lecithin free, 85-90% dark chopped chocolate
200 grams of chopped Sulfite free, no added sugar, dried apricots
The eggs were separated into the yolks add the mashed bananas,
baking powder and the oil. Stir the mixture until smooth. Whisk the whites stiff foam. Half of the foam added to the yolks, delicately rotated almonds, dark chocolate, and stir the peaches, and then add the rest of the egg foam. Lightly oiled silicone into a form (if there is metal form, it is lined with baking paper) and approx. Bake at 150 degrees for 70 minutes. Check that the center is cooked; if not, then covered with aluminum foil and bake further. When you are baking the top browns too quickly, you already can be covered with foil. The form gently tipped, on the grille let it cool. Eat when is cooled slice and serve.
